Last night I tried out another quinoa recipe. Quinoa is great because it is easy and quick to cook, like white rice, but is much healthier (more like brown rice). It isn't so great by itself, but I am trying to find good recipes that use it since they tend to be pretty easy and healthy for a filling meal.
I made coconut quinoa and kale with tropical pesto. It is pretty good. Kyle especially liked that there was a lot of kale in it. I liked it pretty well, but I think I would have preferred it with fewer or no red onions (too strong since they aren't cooked!) and cooked kale (that is a lot of raw veg). I like the caprese quinoa salad better, but I like anything with pesto, mozzarella, and tomato in it.
